Derek Zimmerman, a Bismarck native, has always been passionate about the restaurant industry. After attending NDSU and working full-time at a Fargo restaurant during his studies, he graduated in May 2024 and returned home to join his family’s legacy at Peacock Alley, North Dakota’s oldest restaurant. With a deep appreciation for history, Derek enjoys sharing the rich stories of Peacock Alley, a landmark that has proudly stood for 91 years in downtown Bismarck.
Now part of the Peacock Alley team, Derek is bringing fresh ideas to enhance the customer experience, from creative marketing to innovative drink creations. Teaming up with General Manager Paulie, Derek is helping to make Peacock Alley a fun, welcoming place where people come together.
The restaurant uses only the freshest ingredients, avoiding microwaves, and continues to honor its heritage—where even four U.S. presidents have dined.
